Recipe Unlimited also owns other restaurants including Swiss Chalet, Milestones, Montana's and Harvey's. Founded in 1978, there are Kelseys restaurants across Canada, excluding the province of Quebec (where the chain was withdrawn in 2008). History Once a chain of more than 140 locations from Quebec westerly to British Columbia, the company has closed all but two locations in British Columbia, shuttered nine locations in Alberta, closed all locations in Saskatchewan, and closed all locations in Manitoba. In Ontario, numerous locations across the company have closed including locations in Kitchener, Simcoe, and Fort Erie. The Owen Sound location was due to close on December 20, 2013. As of November 2013 there are just 88 Kelseys locations left in Canada, primarily in the province of Ontario. Kelseys has a licensing agreement through early 2011 with CBS Consumer Products for the rights to the theme song from the 1980s sitcom Cheers, which the chain says could lead to "other opportunities" in the future. Kelseys also uses the show's title in its slogan "Cheers to good friends", although (due to the generic nature of the word "cheers" in regards to pubs and the like) it is not clear whether permission from CBS was required for this. Rebranding Kelseys' parent company Recipe Unlimited has been going through an era of rebranding and renovations including its location at 1011 The Queensway Etobicoke, Ontario where the company is piloting a new restaurant design that features an emphasis on a newer style of Kelseys dining experience. Many under-performing Kelseys restaurants have been closing down over the past couple of years and the new design is going to try to change the customer's eating experience to become more lively and exciting. The restaurant's old slogan "Neighbourhood Bar and Grill" has been upgraded to "Ambitiously Hardworking and Sociably Unpredictable".[2] Bright neon colours are found throughout the restaurant along with an upgraded menu that features a smaller and more limited selection of the most popular items found at other Kelseys locations. The new bar menu that was first used at this Kelseys is now available throughout all 88 locations in Ontario, Manitoba and British Columbia. The new bar menu is modelled after its location in Etobicoke featuring bright neon colours along with new items that reflect more of a pub than a bar and grill. The restaurant design is going to be applied to more locations when the franchisees choose to upgrade.

Styles of sushi and its presentation vary widely, but the one key ingredient is "sushi rice", also referred to as shari (しゃり), or sumeshi (酢飯). Sushi is traditionally made with medium-grain white rice, though it can be prepared with brown rice or short-grain rice. It is very often prepared with seafood, such as squid, eel, yellowtail, salmon, tuna or imitation crab meat. Many types of sushi are vegetarian. It is often served with pickled ginger (gari), wasabi, and soy sauce. Daikon radish or pickled daikon (takuan) are popular garnishes for the dish. Sushi is sometimes confused with sashimi, a related dish in Japanese cuisine that consists of thinly sliced raw fish, or occasionally meat, and an optional serving of rice. History: Sushi originates in a Southeast Asian dish, known as narezushi (馴れ寿司, 熟寿司 – "salted fish"), stored in fermented rice for possibly months at a time. The lacto-fermentation of the rice prevented the fish from spoiling; the rice would be discarded before consumption of the fish.[4] This early type of sushi became an important source of protein for its Japanese consumers. The term sushi literally means "sour-tasting" and comes from an antiquated し (shi) terminal-form conjugation, 酸し sushi, no longer used in other contexts, of the adjectival verb 酸い sui "to be sour"; the overall dish has a sour and umami or savoury taste. Narezushi still exists as a regional specialty, notably as funa-zushi from Shiga Prefecture. Osaka-style sushi, also called "Oshi-zushi" or "hako-sushi" Vinegar began to be added to the preparation of narezushi in the Muromachi period (1336–1573) for the sake of enhancing both taste and preservation. In addition to increasing the sourness of the rice, the vinegar significantly increased the dish's longevity, causing the fermentation process to be shortened and eventually abandoned. The primitive sushi would be further developed in Osaka, where over several centuries it became oshi-zushi or "hako-zushi"; in this preparation, the seafood and rice were pressed into shape with wooden (typically bamboo) molds. It was not until the Edo period (1603–1868) that fresh fish was served over vinegared rice and nori. The particular style of today's nigirizushi became popular in Edo (contemporary Tokyo) in the 1820s or 1830s. One common story of nigirizushi's origins is of the chef Hanaya Yohei (1799–1858), who invented or perfected the technique in 1824 at his shop in Ryōgoku. The dish was originally termed Edomae zushi as it used freshly caught fish from the Edo-mae (Edo or Tokyo Bay); the term Edomae nigirizushi is still used today as a by-word for quality sushi, regardless of its ingredients' origins. The earliest written mention of sushi in English described in the Oxford English Dictionary is in an 1893 book, A Japanese Interior, where it mentions sushi as "a roll of cold rice with fish, sea-weed, or some other flavoring". There is an earlier mention of sushi in James Hepburn's Japanese-English dictionary from 1873, and an 1879 article on Japanese cookery in the journal Notes and Queries.

History A Canadian A&W (in Stratford, Ontario) The first Canadian A&W restaurant opened in Winnipeg, Manitoba in 1956. In 1975, facing competition from the growing Canadian operations of McDonald's, the company launched what was to have been a temporary advertising campaign starring an orange-clad mascot, The Great Root Bear. The bear and the tuba jingle that accompanied him became a long-running campaign (the tune, entitled "Ba-Dum, Ba-Dum", was released as a single by Attic Records, credited to "Major Ursus", a play on Ursa Major or "great bear").
